A complete dish with tender roast beef and roasted root vegetables for a comforting dinner.

Servings: 4-6

Star ingredient: Beef top round roast 

Ingredients

 

  • 1 top-round roast beef
  • 2 carrots, cut into 2cm slices
  • 1 turnip, cut into 2 cm cubes
  • 2 potatoes, cut into 2 cm cubes
  • 1 onion, coarsely chopped
  • Olive oil
  • 1 tbsp. fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F.
  2. Season roast beef with salt and pepper.
  3. In a large ovenproof dish, combine vegetables, thyme, salt and pepper.
  4. Place roast beef on vegetables and drizzle with olive oil.
  5. Bake for 10 minutes, then turn the oven down to 275°F and continue cooking for about 2 hours, or until the roast beef is cooked to your liking.
  6. Let roast beef rest for 10 minutes before slicing, then serve with vegetables.
