To prepare the jerk marinade, place all ingredients in a blender or food processor and blend until smooth.
Place chicken and marinade in a large freezer bag or airtight dish. Refrigerate for at least 4 hours, ideally overnight.
Preheat oven to 350°F.
Remove chicken thighs from marinade, reserving it for later.
Place chicken thighs in an ovenproof dish and bake for about 45-60 minutes (turning halfway through), until chicken is cooked through and skin is crispy.
Serve hot, garnished with lime wedges and fresh coriander if desired.
