Chicken thighs marinated in a blend of Jamaican jerk spices, offering a dish full of spicy, smoky and lightly sweet flavors.

Ingredients

 

  • 4 chicken thighs
  • 1 onion, chopped
  • 4 garlic cloves, coarsely chopped
  • 1 tbsp. fresh ginger, coarsely chopped
  • 1 habanero pepper, deseeded and coarsely chopped
  • Juice of 2 limes
  • 2 tbsp. soy sauce
  • 1 tbsp. cider vinegar
  • 2 tbsp. olive oil
  • 2 tbsp. honey
  • 1 tbsp. chopped fresh thyme
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg 
  • 1 tsp ground cloves
  • 1 tsp. ground allspice
  • Salt and pepper to taste

Instructions

  1. To prepare the jerk marinade, place all ingredients in a blender or food processor and blend until smooth.
  2. Place chicken and marinade in a large freezer bag or airtight dish. Refrigerate for at least 4 hours, ideally overnight.
  3. Preheat oven to 350°F.
  4. Remove chicken thighs from marinade, reserving it for later.
  5. Place chicken thighs in an ovenproof dish and bake for about 45-60 minutes (turning halfway through), until chicken is cooked through and skin is crispy.
  6. Serve hot, garnished with lime wedges and fresh coriander if desired.
