Grilled Chicken Breasts with Mango and Avocado Salsa

Chicken breasts served with a fresh, fruity mango and avocado salsa for a refreshingly different meal!

Servings: 4

Preparation time: 30 minutes

Star ingredient: Boneless chicken breast

Ingredients

 

  • 4 boneless chicken breasts
  • 1 mango, diced
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1 green onion, finely chopped
  • Juice of 1 lime
  • 2 tbsp. fresh coriander, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. To prepare the salsa, combine the mango, avocado, red onion, green onion, lime juice and cilantro in a bowl with a drizzle of olive oil. Season to taste and set aside.
  2. Season chicken breasts with salt and pepper.
  3. Heat a drizzle of olive oil in a large skillet over medium-high heat
  4.  Add chicken breasts and cook for about 10-12 minutes on each side, until golden brown and internal temperature reaches 165°F.
  5. Allow chicken breasts to rest for a few minutes, then slice. Serve chicken slices with a generous portion of mango and avocado salsa.
