Grilled Chicken Breasts with Mango and Avocado Salsa

Chicken breasts served with a fresh, fruity mango and avocado salsa for a refreshingly different meal!
Servings: 4
Preparation time: 30 minutes
Star ingredient: Boneless chicken breast
Ingredients
4 boneless chicken breasts
1 mango, diced
1 avocado, diced
1/2 red onion, finely chopped
1 green onion, finely chopped
Juice of 1 lime
2 tbsp. fresh coriander, chopped
Salt and pepper to taste
Olive oil
Instructions
To prepare the salsa, combine the mango, avocado, red onion, green onion, lime juice and cilantro in a bowl with a drizzle of olive oil. Season to taste and set aside.
Season chicken breasts with salt and pepper.
Heat a drizzle of olive oil in a large skillet over medium-high heat
Add chicken breasts and cook for about 10-12 minutes on each side, until golden brown and internal temperature reaches 165°F.
Allow chicken breasts to rest for a few minutes, then slice. Serve chicken slices with a generous portion of mango and avocado salsa.
