Cream and Mushroom Chicken Breasts

A comforting dish with a creamy mushroom sauce, perfect for a quick weeknight meal.

Servings: 4

Preparation time: 40 minutes

Star ingredient: Boneless chicken breast

Ingredients

 

  • 4 boneless chicken breasts
  • 250g white mushrooms, sliced
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 tsp. fresh thyme
  • 1 tbsp. butter
  • 1 cup cooking cream
  • 1/2 cup chicken stock
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the butter and a drizzle of oil in a pan, add the chicken breasts and cook for about 8-10 minutes per side.
  2. Set aside. In the same pan, add the mushrooms, onion, garlic and thyme and sauté until the onions are translucent.
  3. Return the chicken to the pan, add the cream and stock.
  4. Simmer over low heat for 15-25 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. Let chicken rest for a few minutes, then serve.
