Baked Chicken Breasts with a Parmesan and Herb Crust

Crispy on the outside and tender on the inside, thanks to its delicious parmesan and herbs crust.

Star ingredient: Boneless chicken breast

Ingredients

 

  • 4 boneless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Panko-style breadcrumbs
  • 1 tbsp. fresh thyme, finely chopped
  • 1 tbsp. fresh rosemary, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, combine Parmesan, Panko breadcrumbs, thyme, rosemary, garlic and 1 tbsp. olive oil. Season to taste with salt and pepper.
  3. Place chicken breasts in an ovenproof dish. Brush each breast with remaining olive oil.
  4. Place chicken in breadcrumb mixture, covering evenly, then return to ovenproof dish. Bake for 35-45 minutes, turning halfway through, or until the chicken is cooked through and the crust is golden and crisp.
  5. Serve hot, with seasonal vegetables or a salad.
