Top Sirloin Steak with a Green Pepper and Cream Sauce

A classic of French cuisine, this steak is served with a creamy green peppercorn sauce, perfect to impress guests.

Servings: 2-4

Preparation time: 30 minutes

Ingredients

 

  • 2 top sirloin steaks
  • 1 tsp. garlic powder
  • 2 tbsp. green peppercorns
  • 1/2 cup cooking cream
  • 1/4 cup beef broth
  • 2 tbsp. brandy or cognac
  • 1 tbsp. butter
  • Salt to taste

Instructions

  1. Season steaks with salt and garlic powder.
  2. In a skillet, melt butter over medium-high heat and sear steaks 2 to 3 minutes per side, or until desired doneness. Remove steaks and keep warm.
  3. In the same pan, add brandy or cognac and deglaze.
  4. Add the green peppercorns and beef stock and reduce slightly.
  5. Stir in crème fraîche and heat until sauce thickens.
  6. Top steaks with green pepper sauce and serve.
