Chicken thighs marinated in a Korean barbecue-inspired sauce, offering the perfect balance of sweet, salty and spicy.

Servings: 4

Preparation time: 45 minutes (excluding marinating time)

Ingredients

 

  • 1 to 2 chicken thighs per person (4 to 8)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons hoisin sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, finely chopped
  • 1 tablespoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • Olive oil for cooking
  • Chopped cilantro for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large bowl, combine soy sauce, honey, hoisin sauce, ginger, garlic, sesame oil and chili flakes.
  2. Add chicken thighs to marinade and coat well. Marinate in the refrigerator for at least 1 hour, ideally overnight.
  3. Preheat a skillet over medium-high heat with a drizzle of olive oil.
  4. Remove chicken thighs from marinade and grill for about 8 to 10 minutes on each side, until cooked through and the skin is caramelized.
  5. Serve hot, garnished with coriander and sesame seeds if desired.
