Baked Chicken Thighs with Potatoes and Carrots

A complete and tasty dish, ideal for a weekday meal.

Star ingredient: Boneless chicken thigh

Ingredients

 

  • 1-2 chicken thighs per person
  • 4 potatoes, quartered
  • 4 carrots, sliced
  • 3 garlic cloves, minced
  • 2 tbsp. olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Arrange chicken thighs, potatoes and carrots in a large ovenproof dish.
  3. Garnish with garlic, thyme, salt and pepper and drizzle with olive oil.
  4. Bake for approximately 30-45 minutes, until vegetables are tender and chicken is golden-brown (internal temperature >165°F).
  5. Let chicken rest for a few minutes, then serve on a bed of vegetables.
