Nordic Shrimp Salad with Quinoa and Avocado

A simple, nutritious salad with quinoa, avocado and shrimps, topped with a lemony vinaigrette.

Servings: 4

Preparation time: 30 minutes

Star ingredient: nordic shrimps

Ingredients

 

  • 400g cooked and shelled prawns
  • 11/2 cups cooked quinoa
  • 2 avocados, diced
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh coriander
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, avocados, cucumber, cherry tomatoes and fresh coriander. Add the nordic shrimps.
  2. For the vinaigrette, whisk together lemon juice, olive oil, honey, salt and pepper in a small bowl.
  3. Pour dressing over salad and toss gently to coat ingredients.
  4. Serve immediately, or refrigerate until ready to serve.
